This chocolate cheesecake is always a hit! It is relatively simple to make and it’s normally one of the first cakes to disappear at our family gatherings. There are several variations that can be taken when making the below recipe. I have added several different toppings. A fruit topping is always a solid choice, but I have added a chocolate syrup topping, caramel syrups, wine reduction sauces, chocolate mousse, and the list goes on and on. Simple Chocolate Cheesecake Recipe for Any Occasion

Ingredients
- 1¼ Cups Graham Cracker Crumbs
- 2 Tbsp Sugar – White, Granulated
- 1 Cups Sugar – White, Granulated
- 2 lbs Cream Cheese
- 3 Tbsp Butter – Melted
- 8 oz Sour Cream
- ¼ Cups Cocoa – Powder
- 1 Cups Flour
- 2 Medium Eggs
Instructions
- In a 5-quart mixing bowl, place 2 pounds of cream cheese and 1 cup granulated sugar and mix on low speed until cream cheese is softened and smooth.
- Add 8 ounces sour cream and continue mixing until well blended.
- Add in 2 eggs, then mix for 2 minutes
- Add in 1 cup flour, 1/4 cup cocoa, and 3/4 cup heavy whipping cream, mix on medium speed until smooth and creamy.
- When fluffy, like soft-serve ice cream as it comes out of the machine, prep your 10 x 2inch sping pan.
- In a large bowl place your graham cracker crumbs and 2 tablespoons sugar, and your melted butter or margarine, then with a wire whisk, whisk them together until well combined.
- Coat the 10 x 2 spring pan with melted butter.
- Place the crumbs on the sides and bottom of the pan.
- Now you very carfully your cheesecake mix as not to disturb the crumbs too much.
- Bake in a pre-heated oven for 55 mins.
- Turn off the oven, let it cool in the oven for 3hrs.
- Remove from the oven let cool at room temp for 90 mins.
- Place in fridge to cool for at least 2 hrs.
- Serve this up with your favorite toppings!
